FARM FRESH RECIPE
With jars of Farm Fresh Orange Marmalade filling our pantries, we asked our favourite baker in New York to come up with a recipe that did justice to the lovely fine cut peels in our marmalade. Follow the recipe for Shortbread NYC's Orange Marmalade Scones.
Ingredients
* 2 1/2 cups all purpose flour
* 3 Tablespoons sugar, divided
* 2 1/2 teaspoons baking powder
* 2 teaspoons orange zest
* 1/3 cup cold butter, cut in small cubes
* 1/2 cup orange marmalade plus 2 Tablespoons for glaze
* 1/4 cup milk
* 1 egg
Instructions
* Heat oven to 400 degrees F. Prepare baking sheet with parchment or silicone baking mat.
* Mix the flour, sugar, baking powder, and orange peel. Cut the butter to the size of small peas.
*Fold in 1/2 cup marmalade, milk and egg. Stir gently until dough forms.
* Empty the dough out and knead until it comes together in a smooth ball. Pat the dough into a round circle and cut into wedges and pull apart to separate slightly. Alternatively use a biscuit or cookie cutter to cut 2 1/2 inch rounds.
* Sprinkle the remaining Tablespoon of sugar then bake for 15-20 minutes or until golden.
Serving
Remove scones from the oven and brush the warm scones with the remaining marmalade. Serve immediately.
