Strawberry Cake
Paired with our Jaipur Blend - sweetened with cocoa and adorned with rose petals, dried oranges.
This recipe makes an 8" cake with 3 layers.
For the Cake
Flour, 3 cups
Sugar, 2 cups
Baking Powder, 1.5 tablespoons
Salt, 0.75 teaspoon
Vegetable Oil, 0.75 cup
Strawberry Puree or Jam, 1.5 cup
Vanilla Essence, 1 teaspoon
Lemon Juice, 1 teaspoon
Eggs, 4
For Decoration
Heavy Whipping Cream, 3 cups
Sugar, 0.25 cup
Strawberries, 3-5, stems left on & quartered
Steps
1. Preheat the oven to 325 degrees Fahrenheit.
2. Grease and flour three 8" round cake pans. Make sure the cake pans are tall so that the batter does not overflow when baked.
3. Whisk to combine the flour, sugar, baking powder, and salt in a large bowl.
4. Add the vegetable oil, strawberry puree or jam, vanilla, and lemon juice to the dry ingredients and whisk until combined.
5. Add the eggs to the batter and whisk until smooth. Once the batter is smooth, stop mixing so the gluten doesn't over-develop.
6. Divide the batter evenly between the cake pans.
7. Bake for 25-30 minutes, or until the tops are firm to the touch and cake is cooked through.
8. Cool for 5 minutes and remove the cakes from the pans, scraping the edges with a knife to loosen the cake, if necessary, and cool on wire racks.
9. Level the tops of the cooled cakes and layer them on a dish or cake stand.
10. Whip the heavy cream along with the 0.25 cup sugar, to very stiff peaks. The thickness of the mixture will help it hold up the cake layers and last longer.
11. Add a spoonful of cream to the first layer of cake and spread out evenly to the edges.
12. Add the second layer of cake to the smoothed cream.
13. Add a spoonful of cream to the second cake layer, smoothing to the edges.
14. Top with the third layer of cake.
15. Pipe large swirls of the remaining whipped cream around the outer edge of the top layer. Top each swirl with a strawberry quarter.
